New concept and strong community

Restaurant Plates originally started with a sharing concept, but in 2025 the direction was adjusted towards a more accessible bistro format. "The new concept makes it easier to go out and eat on a weekday," explains Lars Svendsen.

At the same time, the cocktail bar was relaunched as BAR66 – a name that plays on the height above the city and signals that you are welcome here, even just for a drink. The bar's red thread is Bornholm, where Lars himself comes from.

Another important focus area has been employee well-being and development. With a new internal app, the team has gained a digital platform for communication and training – an important step in an industry where many employees are students, and time for joint courses can be a challenge.
